There is nothing better than a big bowl of easy whole30 chili on a cold winter night! Best of all, this whole30 chili recipe is so EASY to make. It’s rich and satisfying thanks to my three secrets to make your whole30 classic chili the BEST EVER. Read below for the details, you don’t want to miss them.

Chili is one of my favorite meals because you get everything you need in one bowl! Protein? Check. Vegetables? Check. TONS of flavor? Check. Whole30 chili toppings? CHECK!

How To Make Whole30 Chili

This paleo beef chili recipe is super simple to make.

First we start out by sautéing diced bell peppers in a little olive oil… just look at this colorful mix of vegetables below! Then we add in garlic, green chiles, spices, fire roasted tomatoes, tomato sauce, beef, and broth. All that’s left is to simmer, simmer, simmer away!

PRO TIP: I have three secrets to making whole30 chili:

  • Cook the spices with the peppers before adding any liquid. This lets them get nice and toasty in the hot pan, which helps to bring out a richer, deeper flavor.
  • Green chiles: These little chiles aren’t very spicy, but they do add a tangy-ness to this whole30 chili recipe. Don’t skip them!
  • Bone broth: the collagen found in bone broth helps add protein, but it also helps add a really rich, deep flavor that traditional broth just doesn’t have.

Is Chili Whole30 Approved?

This chili recipe is whole30 approved. But not every chili recipe is! Whole30 chili: no beans, no seed oils, no cheese.

The beans, seed oils, and cheese or dairy toppings are the biggest offenders when it comes to making whole30 classic chili. These aren’t whole30 friendly.

But, it’s easy to make it whole30 compliant. Simply use an approved oil like avocado oil and be sure to skip the beans, cheese, and sour cream.

This whole30 chili recipe is so flavorful, you won’t miss the beans and dairy. Promise!

Can You Make Whole30 Chili In A Crock Pot Slow Cooker?

Yes, you can make this easy paleo chili in both a Crock Pot and an Instant Pot. I tried it in a Crock Pot first, because I’m just more familiar with using it. I’ve had it around for so much longer.

Low carb Crock Pot chili is a great option for those times when you’ll be running around all day, or even doing other things at home all day.

Brown the ground beef, dump all the ingredients into your slow cooker in the morning, and off you go! It will do its thing on its own. You’ll have a delicious low carb dinner ready to go at the end of the day.

This is one of the reasons I make my no bean chili more often in the Crock Pot. It’s super convenient to take care of dinner early on and not have to worry about it for the rest of the day!

If you agree that no bean chili in the slow cooker is the way to go, you can also try slow cooker steak chili from Perry’s Plate. It has just a little coconut sugar, which you can skip for whole30 chili or easily swap with a low carb sweetener for low carb chili. Otherwise, it’s naturally low in carbs just like this one.

Can You Make This Whole30 Chili In The Instant Pot?

Yes, you can make this into an Instant Pot whole30 chili recipe. The instructions are almost the same as the stovetop.

Yo make it in the Instant Pot, set it to Saute and brown the veggies, then brown the beef. Add everything else, and then cook it under pressure. You’ll set the Instant Pot to High pressure and cook for 30 minutes.

But to be honest, I still make this most often on the stovetop!

How To Freeze Whole30 Classic Chili

It’s super easy to freeze this whole30 chili! You can make it ahead in your Crock Pot or Instant Pot (or the stove, of course!), and then freeze it using freezer bags.

If you want it to last even longer, you could vacuum seal the freezer bags to remove any remaining air once it’s solid. When you’re ready to eat, just thaw and reheat it.

Whole30 Chili Toppings

The toppings for this whole30 classic chili are of course optional, but highly recommended. My five favorite toppings are:

  • Minced cilantro
  • Diced white onion
  • Diced avocado
  • Sliced jalapeno
  • Squeeze of lime

  • 1 lb Ground beef
  • 2 tbsp Olive oil
  • 2 medium Bell peppers (diced)
  • 1 medium White onion (diced)
  • 4 cloves Garlic (minced)
  • 1 4-oz can Diced green chiles
  • 1 tbsp Chili powder
  • 1/2 tbsp Cumin
  • 1/2 tbsp Garlic powder
  • 1/2 tbsp Onion powder
  • 1/2 tbsp Paprika
  • 1 tsp Sea salt
  • 1/2 tsp Cayenne pepper
  • 1 14-oz can Fire roasted tomatoes
  • 1 cup Tomato sauce (no sugar added)
  • 1 cup Bone broth

Optional Toppings

  • White onion (diced)
  • Avocado (diced)
  • Fresh cilantro (chopped)
  • Lime wedges
  • Jalapenos (sliced)

  1. Heat the oil in a large heavy bottomed soup pot (I used my dutch oven) over medium high heat. Saute the bell peppers for 2-3 minutes. Add in the onion, garlic cloves, diced green chiles, and spices. Cook 1 minute longer.

  2. Add in the ground beef and cook for about 10 minutes, until browned, crumbling with a wooden spoon.

  3. Add in the tomatoes, tomato sauce, and broth. Cover and reduce heat to low to maintain a low simmer. Cook 1 hour.

  4. To serve, top with your desired toppings.
